Zucchini with Roasted Peppers, Corn, and Cream (Calabacitas con Crema)

Roasted poblano chiles and cream—one of the showstoppers of Mexican cuisine—welcomes zucchini and corn into the classic mix.

Ingredients :

1 lb . ( 4 small-scale ) zucchini , cut back into1/2 - in . pieces1 scant tsp . salt1 poblano chile1 Tbs . unsalted butter1 Tbs . vegetable oilKernels sheer from 2 spike fresh sweet-scented corn ( about 1 cup ) , or 1 cup icy edible corn , defrosted1/2 medium ashen onion , thinly sliced2/3 cup big ointment or crème fraÎche
