Harvesting Dandelion Greens

Since it ’s so too soon in the year , combined with the fact that we ’ve had a rather cold winter , our local dandelion greens are rather pocket-sized and not quite abundant yet . They are still around , though .

I did n’t remember I had quite enough to forage for this recipe , so I chisel slightly and buy a beautiful bunch of dandelion greens at my local food for thought conscientious objector - op .

In a month or two there will probably be so many blowball greens in and around my yard that I wo n’t have to do this , but for now I thought I ’d leave them be to grow a bit bigger .

Anyways , I feel lucky to have access to such awesome food in my community ! And these dandelion greens are absolutely gorgeous . They must come from a train variety that are grown just for their large greens .

How to Make Dandelion Pesto

This blowball pesto formula is pretty stock as far as pesto recipes go , with a few minor changes . First , dandelion leaves replacebasil , have it great for digestion and for the liver .

The addition of lemon tanginess and juice tempers the jaundice of the blowball greens , and the turmeric and black peppercorn gives the pesto anti - incitive properties .

If you ca n’t find any dandelion William Green , perhaps you ’ll have undecomposed luck making homemade pesto witharugula pestoorchickweed pesto . They’re both delicious !

put the blowball greens , true pine nut , garlic , olive rock oil , maize juice and zest , and spiciness into a liquidizer or nutrient mainframe . Process until smooth . If it ’s too thick , lento add a bit more olive fossil oil .

Add the Parmesan and continue to merge until the potpourri has a still consistency .

Refrigerate , and eat within 3 24-hour interval . you may also freeze the pesto into ice cube tray for later use .

This dandelion pesto is so amazingly pleasant-tasting ! It has a little bite from the blowball greens , but not overwhelmingly so . It ’s burnished and fresh , and full of aliment . I even made a double batch and froze some for later !
