I like to celebrate the mid-winter holiday of St. Valentine with red vegetables–so of course the seasonal earthy root vegetable, the beet, is what I choose.

What foods do you limit for your loved single on Valentine day?Besides the obvious choice of hot chocolate , what else do you go for ? Of course there are the known and popular aphrodisiac such as oysters , champagne , edible asparagus , globe artichoke , avocados , figs , etc . For the fun of it , I wish to expend foods that are red , or even pinkish in coloration . So immediately , beets ( Beta vulgaris ) come up to beware . Not only are they naturally very red - purple in pigmentation , from betacyanin , which is a malignant neoplastic disease - fighting agent , they are a root vegetable that is promptly available this time of year .
Some other reddened vegetables are daikon , which could be used as a garnish in your salad . Lycopersicon esculentum and chile pepper , which are n’t in time of year , can be used tin or dried ; sometimes I make spirit - mold raviolis and do them with a traditional red marinara sauce . blood-red dough , which in my judgement ’s oculus is really more dismal - purple rather than red , can also be tear up and added to salad .

A beet puree made from miffed or roasted beets , conflate with a large knob of butter or a few tablespoons of olive oil , a few cloves of reinvigorated garlic , a fistful of tart roselle leaves , or dill weed or cress green , season with salinity and pepper to try out is at once , sweet , earthy and savory — I can wipe out this by the spoonful .
These are just a few of my favourite ways to eat up this crude root veg , which is high in natural sugars ; they are high in folate , calcium , manganese and atomic number 19 . Beets also contain many earth mineral and vitamins : vitamin C , copper , smoothing iron , phosphorous and tryptophan . Beets are a tonic and cleansing food and have antioxidant , anti - seditious and restore feature . Do not fling those beet greens ! I prepare them as I would any other wilted immature and often conflate them with chard , spinach , kale , nettles and/or dandelion greens ; they make a wondrous filling for ravioli or cannelloni , or spanakopita .
